Thyme-Roasted Sweet Potatoes
Honestly, I’m not sure if sweet potatoes are vegetables or carbs, so I’ve put them in both categories.
Ingredients:
2-3 medium sized sweet potatoes
1 tbsp finely chopped thyme (Or if you’re lazy, you can use the dried stuff.)
Olive oil
Salt
Directions:
Preheat the oven to 400F.
Peel and cut the sweet potatoes into disks.
Coat with olive oil and sprinkle with the thyme and salt. Honestly, who knows how much salt I use. Just go until your hand says stop. If you overdo it, just cut back next time. This is a learning process.
Bake for like 20 minutes? I don’t know. Just keep an eye on them. They should be golden brown and soft. You can flip them if you think they are looking too dry on the top side.
