Thyme-Roasted Sweet Potatoes

Honestly, I’m not sure if sweet potatoes are vegetables or carbs, so I’ve put them in both categories.

Ingredients:

2-3 medium sized sweet potatoes

1 tbsp finely chopped thyme (Or if you’re lazy, you can use the dried stuff.)

Olive oil

Salt

Directions:

  1. Preheat the oven to 400F.

  2. Peel and cut the sweet potatoes into disks.

  3. Coat with olive oil and sprinkle with the thyme and salt. Honestly, who knows how much salt I use. Just go until your hand says stop. If you overdo it, just cut back next time. This is a learning process.

  4. Bake for like 20 minutes? I don’t know. Just keep an eye on them. They should be golden brown and soft. You can flip them if you think they are looking too dry on the top side.
