Rosemary Carrot Fries

The cousin to Thyme-Roasted Sweet Potatoes.

Ingredients:

4-5 large carrot

1 tbsp chopped rosemary (Or you can use the dried stuff.)

Olive oil

Salt

Directions:

  1. Preheat the oven to 400F.

  2. Peel and cut the carrots into fries. The best way to do this is to cut the carrots in half hamburger-style, then in half hotdog-style. You know what I mean? That way you can have the carrots lay flat against your cutting board instead of rolling around. I’m not trying to have my readers lose any fingers.

  3. Coat with olive oil (this doesn’t have to be a lot of oil -use your judgment). Sprinkle with rosemary and salt.

  4. Bake for like 15 minutes. Just keep an eye on them and pull them out when they start to look like fries. They should curl up a little bit.
