Scallops

This isn’t really a full recipe, but here is how you should cook scallops. You really don’t want to mess this up because scallops are expensive and easily ruined. Make sure that you buy these fresh and cook them ASAP.

Directions:

  1. Pat the scallops dry with a paper towel.

  2. Season generously with salt and pepper on the tops.

  3. Heat olive oil in a pan until very hot.

  4. Place the scallops seasoning side down in the pan. It will sizzle and sear. DO NOT TOUCH OR MOVE THEM.

  5. Cook on one side for 1.5 minutes.

  6. Quickly pat the tops dry again and season generously with salt and pepper.

  7. Flip and cook another 1 minute. DO NOT TOUCH OR MOVE THEM.

  8. Remove and put on a plate.

When done correctly, scallops should be tender and smooth on the inside with a crust on both sides.
