Chicken Tikka Masala
Complicated but worth it.
Ingredients:
1.5 lbs chicken breasts
1/4 cup plain Greek yogurt
2 T peanut oil
2 tsp lime juice
1 clove garlic, minced
1 T coriander
1 1/2 tsp cumin
1/2 tsp cardamom
1/2 tsp nutmeg
1 1/2 tsp paprika
1/2 tsp cayenne
1 T fresh ginger, grated
4 T butter
1 onion, finely chopped
1 1/2 cup tomato puree
3/4 cup water
1/2 cup heavy cream
1 1/4 tsp salt
1/2 tsp pepper
1/2 cup fresh cilantro (optional)
Directions:
Beat chicken breasts with a rolling pin until 1/2 inch thick. Prick all over with a fork.
Mix yogurt, oil, lime, garlic and rub over chicken. Let marinate while making the sauce.
Mix coriander, cumin, cardamom, nutmeg, paprika, cayenne, ginger.
Melt butter. Sauté onion until light brown.
Add spices to butter and onion. Add tomato, water, cream.
Bring to boil, then down to a simmer until thick.
While sauce is simmering, cook chicken on medium heat until seared and cooked. Cut into small pieces.
Add to sauce. Simmer for 5 minutes.
Add pepper, salt, cilantro (optional garnish).
Serve with naan or basmati rice.
