Tuna Patties
Do you have a meal that Mom always makes when you come home? These are it for me.
Note: The thumbnail photo also shows broccoli from Chrissy Teigen’s second cookbook. Very good.
Ingredients:
3 T butter
1/4 cup flour
1/2 tsp chicken bouillon (one cube)
2/3 cup milk
18 oz. canned tuna
1 T parsley
1 tsp lemon juice
Pepper
Nutmeg
Paprika
Bread crumbs
Eggs
Directions:
Melt the butter in a saucepan.
Add flour to butter and bouillon. Make a roux by stirring until thickened and golden brown (flour is cooked). Should take only a couple of minutes.
Add milk and cook until thick, stirring constantly. Cook 1 additional minute.
Remove from head and add tuna, parsley, lemon juice, dash of pepper, dash of nutmeg, and dash of paprika.
Cover and chill until cold.
Form into golf balls, dip into bread crumbs, dip into beaten egg, dip into bread crumbs again.
Pan fry in oil, smushing flat with the spatula into a patty shape. Fry until golden brown on each side.
