Pineapple Upside Down Cake

Dedicated to my boyfriend. Yuck.

Ingredients:

3 tbsp butter

1/2 brown sugar

1/2 can diced pineapple (Drain it and save half for snacking.)

1 1/2 cup flour

2 tsp baking powder

1/4 tsp salt

1/3 cup vegetable shortening (A common ingredient in old Black cooking.)

2/3 cup sugar

1 egg

3/4 tsp vanilla

2/3 cup milk

Directions:

  1. Preheat the oven to 350F.

  2. Put the butter in a square cake pan and place in the oven until melted.

  3. Sprinkle the brown sugar on the melted butter and distribute the pineapple chunks.

  4. Mix the drys (flour, powder, salt).

  5. Mix the wets (shortening, sugar, egg, vanilla).

  6. Alternate adding the drys and the milk to the wets.

  7. Pour over the pineapple and spread carefully.

  8. Bake for 40 minutes or until a knife comes out cleanly.
