Raisin Bran Muffins

I was a really fortunate kid: my mom was a morning person. She used to wake up and make us breakfast from scratch every morning before school. Honestly, I think it really changed the trajectory of my life. I know that it’s kind of unrealistic to think that you’ll make breakfast for yourself every morning (let alone your future kids), but I’ve found that muffins are a great compromise. Make a batch on Sunday and have breakfast for the whole week!

Ingredients:

1 tsp vanilla

1/2 tsp cinnamon

1 1/4 cups flour

3 tsp baking powder

1/4 tsp salt

1/4 cup sugar

2 1/2 cups Raisin Bran

1 1/4 cup milk

1 egg

1/4 cup vegetable oil

3/4 cup chopped pecans

1/4 cup shredded coconut

1/2 of a chopped apple (This keeps them moist.)

Directions:

  1. Preheat the oven to 400F.

  2. Mix the Raisin Bran and milk. Let sit.

  3. Mix the drys (flour, baking powder, salt, sugar, cinnamon).

  4. Add the wets to the Raisin Bran mix (vanilla, egg, oil).

  5. Add the drys to the big mixture.

  6. Add the mix-ins (pecans, coconut, apple).

  7. Pour into a buttered muffin tin.

  8. Bake on the top shelf for about 25 minutes or until a knife can be inserted and pulled out clean.
