Stuffed Peppers

An easy dish that will impress your friends.

Ingredients:

1 Tbsp oil

1 lb ground turkey

1/2 diced onion

2 cloves garlic

Salt

1 cup rice

1 cup marinara

1 1/2 cups pepper jack cheese

4 bell peppers

Directions:

  1. Preheat oven to 375F.

  2. Heat the oil in a pan. Cook the turkey.

  3. Add the onion, garlic, and a sprinkle of salt. Cook until golden and soft.

  4. Meanwhile, cook the cup of rice with water. If you don’t know how to do this. Fill the pot with enough water to cover one finger knuckle above the rice.

  5. Add marinara and 1 cup of pepper jack to the turkey mixture. Add another sprinkle of salt.

  6. Stuff the mixture into bell peppers. The bell peppers should have the tops cut off and the middle white parts and seeds taken out. Top the peppers with the rest of the cheese.

  7. Bake for 30 minutes until the peppers are slightly soft and the cheese golden.
