Breakfast Sandwiches

Gotta love a good sando on a Sunday.

Ingredients:

Everything bagel or English muffin or croissant

1 egg

Pesto

1/4 onion, chopped

Spinach

2 strips bacon

Cheddar or pepper jack cheese

Salt

Pepper

Directions:

  1. Toast the bagel. Spread with pesto on one side.

  2. Cook the bacon. Arrange on the sandwich.

  3. Fry the egg (salt and pepper if you like) in the bacon fat. Melt a slide of cheese over the egg as it cooks. Arrange on the sandwich.

  4. Cook the onion in the bacon fat. Add spinach and cook down. Arrange on the sandwich.

  5. Enjoy.

This is another one of what I call “kitchen sink” meals. As you keep cooking, you’ll learn to make things from what is in the fridge: scrambled eggs, sandwiches, pasta, quiche, pot pie, etc. You’ll get an intuition for what flavors will work together based on experiences with similar dishes. I believe in you. You can do this.
