Kale Chips

Honestly, this is a very easy way to eat vegetables. I am iron-deficient, so I’ve got to have my kale.

Ingredients:

Kale

Olive oil

Salt

Directions:

  1. Preheat the oven to 400F.

  2. Wash and cut the kale into bite-sized-ish pieces. They will shrink in the oven.

  3. Spread the kale out on the baking tray. Sprinkle with ~3 Tbsp of olive oil. It should keep the kale from drying out, but also not get it sopping. Sprinkle about 1 tsp of salt over the kale as well.

  4. Bake for 10ish minutes, then flip, then keep baking until shriveled, crunchy, and lightly brown.
