Lemon Poppyseed Cake
I’ve finally gotten to the point where people request recipes from me. This one’s for you, Greg.
Ingredients:
1 cup sugar
1/2 cup buttermilk
3 tbsp lemon juice
1 tbsp lemon oil (Or two lemons worth of zest if you have time for that.)
3 eggs
1 3/4 cups flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2/3 cup olive oil
1 tbsp poppy seeds
4 tsp lemon juice
1/2 cup powdered sugar
Directions:
Preheat the oven to 350F.
Mix the wets (sugar, buttermilk, 3 tbsp lemon juice, lemon oil, eggs).
Mix the drys separately (flour, powder, soda, salt).
Mix the wets and drys.
Add the olive oil and poppy seeds.
Pour into a greased loaf pan.
Bake for 45 minutes to 1 hour. Let cool in pan briefly then tip out.
Beat 4 tsp lemon juice and powdered sugar to make glaze. Pour over the loaf.
Something that I love about lemon poppyseed is that the flavor combination is foolproof. You can do anything with these flavors: cookies, pancakes, etc. Try experimenting with a combo that you like.
