Cornbread

I mean look at the picture below. It’s a mess. The plate is covered in butter and it is obvious that I ate the first piece I was supposed to take a picture of. That’s how cornbread is supposed to be: buttery, messy, and causing lack of self-control.

Ingredients:

6 T butter, melted

1 cup cornmeal

3/4 cup all purpose flour

1 T sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 eggs

1 1/2 cup buttermilk

Directions:

  1. Preheat the oven to 425F.

  2. Mix the drys (cornmeal, flour, sugar, powder, soda, salt).

  3. Mix the wets separately (butter, eggs, buttermilk). Add to the drys and stir until there are no lumps.

  4. Pour into a greased 8x8 inch dish.

  5. Bake for about 20-25 minutes.
