Lettuce Wraps

Even if lettuce doesn’t have any nutrients, you can still pretend to get a full serving of veggies with this lil’ snack.

Ingredients:

1 tbsp olive oil

1 lb ground chicken

2 cloves minced garlic

1 diced onion

2 tbsp soy sauce

1/4 cup hoisin sauce

2 tbsp rice wine vinegar (Pour some of this over sushi rice with a sprinkling of sugar, top with toasted sesame seeds and eat with seaweed. Delicious.)

1 tbsp finely chopped ginger

1 tbsp sriracha

1 can water chestnuts, chopped

2 thinly sliced green onions (I find that it’s hard to use all of the green onions that I buy before they wilt but you can use them to make scallion pancakes.)

Salt

Pepper

Butter lettuce (Wash these.)


Directions:

  1. Put the oil in the pan. Put the chicken in the pan and cook thoroughly.

  2. Add everything else but the lettuce. Cook until thickened.

  3. Serve in the lettuce.
