Chicken Pot Pie

This makes a lot of food because you can scale the filling to be as much as you want. When I make too much filling, I freeze it and make another pie later or serve it on top of some mashed potatoes.

Ingredients:

1 potato cut into cubes

2 chopped carrots

1/2 chopped yellow onion

1/2 rib of celery

1 Tbsp butter

1/2 Tbsp oil

3 Tbsp flour

1 1/2 cup chicken broth

2 cups cubed cooked chicken

1/3 cup frozen peas

1/4 cup heavy whipping cream

1/2 tsp garlic salt (or garlic powder and salt)

1/2 Tbsp fresh parsley (or dried)

1/8 tsp pepper

Pie crust and top

Directions:

  1. Preheat the oven to 375F.

  2. Sauté the potato, carrots, onion, and celery in the butter and oil.

  3. Stir in the flour.

  4. Add the broth.

  5. Boil until thickened.

  6. Add the chicken, peas, cream, parsley, garlic salt, and pepper.

  7. Bake for ~45 minutes or until pie crust is golden.
