Oatmeal Muffins

Is your muffin buttered?

Ingredients:

1 cup instant oats

1 cup buttermilk

1 egg

1/2 cup brown sugar (When using brown sugar, they usually say to pack it into the measuring cup -do that.)

1/2 cup melted butter (This is one stick.)

1 cup all purpose flour

1/2 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon (Or more if you want.)

1/2 tsp vanilla extract (Or more if you want.)

1/2 cup chopped pecans (If you want texture, otherwise these are optional.)


Directions:

  1. Preheat the oven to 400F.

  2. Mix oatmeal and buttermilk together. Let sit while you prepare the other ingredients.

  3. Mix wets in another bowl (egg, sugar, butter, cinnamon, vanilla).

  4. Mix drys in yet another bowl (flour, salt, powder, soda). Always mix the dry ingredients separately to ensure that you don’t get lumps in the final batter. Nothing worse than biting into a clump of pure baking soda.

  5. Add the oatmeal mixture to the wets and mix. Add the drys to the wets and mix. Add pecans if you want.

  6. Spoon the batter into a buttered muffin tray. You can use those little paper liners if you want, but who cares?

  7. Bake for 20 minutes on the top shelf in the oven (or like reasonably towards the top). You can check if they are done by inserting a knife and having it come out clean.

  8. Remove muffins from the tray as to stop the bottoms from cooking. Enjoy!
