Oatmeal Buttermilk Pancakes

These beauties are from my mother’s cookbook. They’re more interesting than regular pancakes and perfect for days when you want oatmeal but aren’t an 80-year-old woman. Warning: the batter needs to sit for 2 hours before frying.

Ingredients:

2 cups instant oatmeal

1/2 cup all purpose flour

3 tbsp sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

2 1/2 cups buttermilk

2 eggs

1/4 cup melted butter

1 tsp vanilla extract

Directions:

  1. Mix oatmeal, flour, sugar, soda, powder, cinnamon, and salt.

  2. Add buttermilk, eggs, butter, and vanilla.

  3. Let sit for 2 hours. Honestly, this part is a little confusing to me because you usually don’t add baking soda or baking powder until about 10 minutes before cooking. This is because the liquid activates the leavening agent and you don’t want all the bubbles to pop before you cook.
