Cardamom Ice Cream

I grew up making homemade ice cream with my dad. We’ve made a lot of weird and delicious flavors over the years and I’m so excited to share them all with you. This recipe is from the last time I was home for Christmas. My dad was gifted a spice kit from Local Spicery and it turned out amazing!

Ingredients:

1 cup milk

3/4 cup sugar

2 eggs

2 cups heavy whipping cream

2 tsp cardamom (Pro tip: substitute 1 tsp vanilla for regular ice cream.)

Directions:

  1. Heat milk over a double boiler until simmering. This is when you put a heat-proof metal bowl over a saucepan of boiling water. The water shouldn’t touch the bottom of the bowl.

  2. Mix the eggs and sugar together in a separate bowl.

  3. While stirring, slowly add the hot milk -don’t scramble the eggs. Stir continuously.

  4. Pour the whole mixture back into the double boiler and cook until the mixture is thick enough to coat the spoon.

  5. Remove from heat and add the whipping cream and cardamom/whatever flavor you want.

  6. Let the custard sit until completely cooled in the fridge.

  7. Churn. I have the ice cream attachment for the KitchenAid stand mixer. It has mixed reviews on the website (some leaky blue stuff), but my family likes theirs.

  8. Sneak a spoonful but put the rest into a container and let “ripen” in the freezer for about 4 hours.

  9. Serve!
